Our favourite quick and tasty weeknight meals
You’ve just picked the kids up from school after a stressful day at work, and now you have to walk the dog, fold the laundry, help with homework, make lunches and… oh right… your mother-in-law is joining you for dinner tonight. Argh!
For those days where you just don’t have the time or energy left to cook dinner (we have these days more often than we’d like to admit) something fast, nutritious and tasty is key. Here are our favourite quick weeknight meals that are family tested and approved.
- Sweet and sour chicken – our kids are always asking for this dish… and we never get tired of it either!
- Spinach, feta and caramelised onion frittata – add a quick side salad and you’ve got a beautiful, nutritious meal that you’ll feel great about feeding your family.
- Falafel patties – add to a pita bread with lettuce, cucumber and tzatziki for a delicious Middle Eastern inspired wrap.
- Beef hot pot – you can’t go wrong with this hearty, comforting crowd pleaser.
